Beautiful, Classic Italian Tomato Sauce

Use this over any pasta or in any baked pasta dish

4-6 servings

1 TB vegetable oil
3 TB unsalted butter
2/3 cup onion chopped
2/3 cup celery chopped
2/3 cup carrot chopped
½ lb ground beef chuck
¼ lb ground pork
Salt
Pepper
1 cup whole milk
1/8 to ¼ whole nutmeg grated
1 cup dry white wine
2 cups whole canned tomatoes (imported from Italy if possible)

Heat the oil and butter in a large stockpot
Over medium heat, add the onion and cook until just softened
Stir in celery and carrot and cook a few minutes more
Add beef and pork, a bit of salt and pepper and cook until just beef is browned
Add milk, simmer gently stirring often, until cooked away
Stir in nutmeg
Add wine and simmer until cooked away
Stir in tomatoes and mix well
Turn down the heat to the barest simmer and let cook, stirring occasionally, for 3+ hours

Serve over your favorite pasta
