Rise of a Commercial Kitchen
You know it is an amazing thing to watch a kitchen develop. Even creating a small kitchen in a home is an act of sheer will, determination and vision. Almost every decision is epic and every step daunting. The process requires adhesion and must work like a perfectly tuned Amati. Let one Domino fall out of place, let one workman fail to appear or even do their job less than perfectly, let one delivery be delayed and the sink hole of consequential failures begins. Yes, you can pick up the pieces and start again where the break occurred but that is generally days or even weeks later. If you care to add the infusion of every functional service to a building, approval of water, addition of septic, building code adherence, building inspectors and health inspectors to this process, you will have what we have tried to do here in the creation of the Dancing Poly Kitchen. We began the process in January and you can now see the date. In the process, we've met a gazillion people, had a lot of both heartbreaks and belly laughs and learned a lot about this old barn and the County of Lake. In all that, the vision of creating a beautiful, fun, functional and educational space was never lost. No, we are not yet complete but we are close enough to smell the aroma of bread in the oven and hear the laughter of both workers and class participants in what was a workroom of a barn. The equipment will arrive over the next two weeks and we are cautiously optimistic that late fall canning and holiday catering are just a month or so away. I swore I would not share pictures before we were complete but I simply cannot help myself. As I say…”everything is so SHIIIIINEEEEEY”. Welcome to the Dancing Poly Kitchen! More to come!
